Protein Rich Soup Recipe Using Home-Made Whey

For those of you who are still not inclined towards enjoying the typical soups, but are forced to do so by your health caretaker, this recipe is a saviour. Being devoid of boiled veggies, this soup actually is a 'best out of the waste' recipe. Yes, the major ingredient here is whey. Not the commercial whey powders, but home-made whey which is generally discarded. For those of you who don't know how to make whey at home, keep reading, its mentioned below. Besides, this recipe is quick, low in calories, provides good amount of Vitamin B2 (riboflavin), calcium, protein and tasty too. Convincing enough for you to try? Then please note the details below.

Ingredients (serves 2) :

Home-made whey- 2 cups
Paneer cubes - 4-5 no.
Cooking Oil - 1 tsp
Cumin seeds - 1/4 tsp
Green chillies slit - 2no.
Black Pepper powder - 1/2 tsp
Salt as per taste
Chopped coriander for garnishing

Method:

For home made paneer and whey :

Boil half litre milk. Add in few drops of lemon and immediately shut the flame. The milk then curdles. Strain the solution using a cheese cloth, such that you get crumbled paneer pieces and a liquid. This liquid is whey (which is then commercially dried to get whey powder). Place the paneer pieces in a dish and cover it with a weight such that the panner gets a firm shape and you can cut them into cubes.

For soup :

Heat oil in a pan, add cumin seeds and allow them to splutter. Then add green chillies and sauté for a minute.

Next, pour in the whey, let it come to a boil.

Add pepper powder, salt and give it a good stir.

Add in the cut paneer cubes and chopped coriander leaves, let it simmer for atleast  30-45 secs.

Take it off flames and serve the hot tasty low calorie healthy soup
